The Background
White tea is quite possibly the most delicately flavoured drink available in the world today. White Teas are generally associated with China, and in particular Fujian province, but for many years India has produced white teas of very high quality. This is a very rare tea from Darjeeling grown at between 6000 – 7500ft above sea level, each leaf is hand selected making Darjeeling White Tips one of the of the world’s finest teas.
The tea is produced using the two leaves found around a new tea shoot at the very top of the bushes. These prized leaves are hand sorted and gently steamed and then dried under a soft heat. The result is an incredibly light fresh flavour with delicate muscatel notes, combine this beautiful flavour with the facts that White Tips contains at least 3 times the antioxidant polyphenols of green or black teas, and has lower levels of caffeine, you really have the most marvellous cup of tea.
Tasting Notes
Darjeeling White Tips makes a beautiful pale golden coloured brew and is perfect at any time of day, and it is a tea you’ll brew again and again. The leaves may be re-infused for between 1- 4 times, it is important to use water that is about 180°F or 90°C. place about 1-1 1/2 teaspoons in your cup or teapot, let the tea steep for up to 3 minutes – repeat until the flavour of the tea is exhausted. Try a cup first thing in the morning, or last thing at night –wonderfully clean on the palate, and great after spicy foods – simply stunning
